Caldera Brewing & Blending Co. invites you to the third instalment of their Shared Table collaboration series at their South Murwillumbah cellar door, welcoming local pitmaster Will and the authentic, wood-fired flavours of 2020 Smokehouse BBQ.

2020 Smokehouse BBQ brings multi-award-winning, traditional Texas-style barbecue right to the Tweed Valley. Best known for his wildly popular weekly pop-up at the Murwillumbah Leagues Club, pitmaster Will cooks tender, richly flavoured local meats smoked for up to 14 hours over naturally seasoned ironbark timber in a traditional Texas offset smoker. Will’s approach to locally sourced ingredients mirrors the same ethos behind Caldera’s oak fermented beers—built on patience, precision, and zero compromises.

The Experience

  • Food & Drink: You’ll enjoy 4-courses highlighting Will’s signature low-and-slow pitmaster creations and wood-fired local produce, complete with a complimentary saison on arrival. Suggested beer pairings will be provided for each course to complement the bold, smoky flavours.

  • The Setup: Enjoy a casual atmosphere with beer-hall seating nestled between the oak barrels, perfect for bringing friends together.

  • Meet the Makers: Chat with the Smokehouse BBQ and Caldera teams about wood selection, long-smoke techniques, oak fermentation, and how smoke and acidity interact on the palate.

  • Additional Beverages: Recommended beer pairings, a full lineup of saisons, dark ales, local wines, and non-alcoholic options will be available for purchase at the bar.

  • Door Prize: One guest from each sitting will take home a special bottle of Caldera saison.
