Australia’s most prestigious wine and beverage awards have been announced for 2025 at Australia’s Wine List of the Year Awards. Established in 1993 by Tucker Seabrook, Rob Hirst and the late Judy Hirst, the awards aim to recognise and reward the time, skill and resources that go into developing exceptional wine and cocktails lists. This year, hatted seaside restaurant, Paper Daisy, took home Australia’s Best Cocktail List 2025, here’s why it’s worth raising a glass to.

About Paper Daisy

Located on-site at one of Australia’s most exquisite, coastal hotels, Halcyon House, Paper Daisy’s dining experience is a celebration of this unique part of the world. Led by head chef Andrew Milford, you can expect a sophisticated menu of satisfying and memorable dishes to accompany every sip. At the bar enjoy thoughtful snacks that pair perfectly with the best cocktail list Australia has to offer. If you’ve got some time on your hands, settle down at the restaurant for a leisurely, multi-course lunch or dinner.

Paper Daisy Cocktail List

Home to Australia’s largest selection of Australian made gins (they literally wrote the book on it), you’ll find a vibrant list of refreshing drinks on the Paper Daisy cocktail list enjoyed best by the sea. Choose ‘Down the Garden Path’ for a zesty little number featuring Four Pillars Navy Strength gin, fresh citrus, basil and mint shrub, capi cucumber and jasmine tea, or sip Tweed-made Ink Gin served with burnt orange and rosemary syrup and a splash of lemon bitters.

Gin not your drink of choice? This cocktail list is packed with classic choices including spicy margaritas and Aperol spritz, ensuring every guest can find the perfect tipple to match their mood or meal.
